Il Mercato will return to its roots in downtown Saltillo with an ambitious investment.

Through an investment package totaling approximately 10 million pesos, Il Mercato is preparing to expand and remodel its facilities , thereby returning to its roots in Saltillo's historic center.
The restaurant company's general manager, Fabio Gentiloni Arizpe , announced that La Terraza Romana, Jugos La Huerta, Il Conde, and La Cantina will be back in service, along with "a surprise" for customers.

The reopening of La Terraza Romana—located at Purcell and Victoria Street—will take place in mid-2026, and work on La Cantina is expected to conclude by the end of 2025, while new projects will begin early next year.
The executive announced this during the restaurant consortium's eighth anniversary celebrations at a press conference, adding that the project will be completed by June 2026 at the latest.
He made it clear that La Terraza Romana, whose renovation will require $4 million, will reopen, along with Il Conde and Jugos La Huerta, which will have more welcoming spaces.
He highlighted that 30 students from the Monterrey Center for Advanced Design Studies (CEDIM) are already working on remodeling the Il Mercato facilities.
Gentiloni Arizpe stated: “This year we are going to make major renovations to La Cantina, the esplanade of II Conde and Bambino.”
He announced that the II Mercato will celebrate eight years of existence on the 26th and 27th of this month, and several surprises are in store for the public.
Meanwhile, baking and pizza classes are being prepared for the occasion, as well as pasta tastings and pairings, as well as a tasting with Casa Madero, a toast + live DJ , and a gastronomic sampling of traditional dishes.
