Tiramisu with Parma ham is elected the best in Brazil

A surprising and bold version of the traditional Tiramisù, with dehydrated Parma ham, mustard and explosive sugar, was considered the best creative recipe of the Tiramisù World Cup Brazil 2025.

The Italian dessert was produced by amateur confectioner Fabiana Boreli, representing São Paulo, who won over the taste buds of a panel of judges, including the Consul General of Italy in São Paulo, Domenico Fornara, and secured her place in the world final of the competition, which will take place in October, in the city of Treviso, in the north of the European country.

"The Tiramisù World Cup Brazil promotes much more than a competition: it celebrates the ties between Brazil and Italy, values ​​the roots of our gastronomy and shows how cuisine is a territory of affection, memory and reinvention", said the consul.

The Brazilian final took place last Saturday (28), right after the São Paulo stage of the tournament, at the headquarters of the Gastronomic Institute of the Americas (IGA), in Campinas, in the interior of São Paulo, and brought together the winners of the regional stages of Bento Gonçalves (RS), Rio de Janeiro (RJ) and Vitória (ES).

This is the second time in a row that the winning recipe belongs to the Creative category, which allows the inclusion of up to three additional ingredients to the six mandatory ones in the Original Recipe: eggs, sugar, mascarpone cheese, savoiardi biscuits, coffee and cocoa.

"Seeing this explosion of creativity and respect for tradition moves me. Fabiana managed to go beyond flavor and surprised us with a sensorial gastronomic experience," highlighted pastry chef and influencer Beca Milano, responsible for conducting the technical evaluation of the dessert.

Now, Boreli will travel to Italy with all travel and accommodation expenses paid for by the Italian brand Matilde Vicenzi, which produces the traditional savoiardi biscuit and is the official sponsor of the Tiramisù World Cup worldwide.

At 45 years old, Boreli is a full-time mother, an amateur beach tennis athlete and a passionate gastronomy enthusiast. Her career is marked by affection, overcoming and a good dose of persistence. This was the third time she tried to win the national title. In 2023, the current champion was national runner-up, losing the title to Patricia Guerra, who won the world edition and became an ambassador for the competition.

In the classic group, the highlight was the tiramisu by food engineer Marcos Muzzi, who was inspired by the ties between Brazil and Italy and presented his dessert in the shape of a coffee bean - a symbol of friendship between the two countries. The execution and balance of flavors earned him the title of São Paulo champion in the category.
