Zia, an odyssey with an Italian flavor at the Métropole Monte-Carlo

Everything on this menu is delicious. From the fluffy pancakes to the crispy pizza crust fresh from the oven, to a series of perfectly seasoned and generous insalata. For their second season around the pool at the Métropole Monte-Carlo, chefs Manon Santini and Rocco Seminara have shifted gears. They've rolled out their Zia concept, now available from morning to night on the Odyssey terrace.

"Breakfast is very important to us," they say in unison, explaining their desire to enhance the menu with porridge, granola, waffles, and eggs Benedict with an Italian twist, where pesto and ricotta are used. Likewise, panettone, a French toast style, finds its place on the table alongside the traditional pastries prepared in the palace's kitchens.

Like being invited to the home of a good cook (la zia in Italian), the portions are generous and full of flavor. Two set menus at 49 or 57 euros and the à la carte menu allow everyone this season to enjoy a colazione-style breakfast around the palace's swimming pool, access usually reserved for hotel guests only.

Glamorous trattoria

The same setup applies for lunch and dinner, where the terrace takes on the air of a glamorous trattoria, where you can enjoy, not far from the fresco designed for the Métropole in his time by Karl Lagerfeld, Sicilian branzino, gamberoni rossi, and Tigelle di Modena.

But also a fine selection of pizzas, the signature of chef Manon Santini, world champion of dessert pizza in 2019. This is the basis of the Zia concept, restoring the nobility of pizza, the most consumed dish in the world. They are shaped, topped, and cooked directly in front of the customers, on the Odyssey terrace.

The chef duo also focuses on mixology, with a cocktail menu... like a magic trick! A deck of cards is handed to the customer. Each card, face down, lists an ingredient or flavor, and thus, blindly, the recipe for the cocktail to be enjoyed is determined.

Having successfully tested the concept at the Métropole last year, it's a natural return for the Zia concept, with a greater presence throughout the season. It's a way to offer a friendly, gourmet menu that complements the palace's two-Michelin-starred restaurant, led by chef Christophe Cussac.

For Manon Santini and Rocco Seminara, this return to the Principality offers them the opportunity to showcase their culinary identity. Here and elsewhere. Because since 2023, with the Intuicion Limited group, which they created to offer high-end concepts for the hotel and restaurant industry, they have been taking their cuisine on a journey!
