A 2024 study published in the journal Environmental Science & Technology found that scratched plastic cutting boards can release small plastic particles when cutting vegetables, meat, or fish. Experts estimate that using such boards could lead to approximately 50 grams of microplastic entering the body through food annually.
Microplastics, particles smaller than 5 millimeters, can accumulate in the environment and the human body. Previous research has linked these particles to inflammation, cardiovascular disease, and long-term health problems.
Experts state that plastic chopping boards are generally safe, noting that microplastics released from them are largely removed during cleaning. While current data suggests this risk is low, they emphasize that further scientific studies are needed to better understand the long-term effects of microplastics.
