How to make zucchini meatballs? Ingredients- 800 grams of zucchini.
- 600 grams of potatoes with slightly watery pulp.
- 150-200 grams of breadcrumbs.
- 2 cloves of garlic.
- 1 branch of pimpernel.
- 1 sprig of mint.
- Black pepper.
- Salt.
- Extra Virgin Olive Oil.
- Boil the potatoes and grate the zucchini.
- In a pan, sauté the chopped garlic cloves and grated zucchini. Add a pinch of salt to make the vegetables sweat.
- In a bowl, add the zucchini and mashed potatoes. Add the previously chopped herbs.
- Add a pinch of black pepper and a little more salt. Add breadcrumbs. Mix everything well until you get a compact dough.
- Make the meatballs. For a better result, weigh each portion of the mixture before shaping them.
