Technologist Volokitina: Dairy products should be consumed in 1-2 days in summer

The expert pointed out that in the store, products such as cottage cheese, for example, should be stored in the store refrigerator at a temperature of 2 to 4 degrees Celsius. Volokitina noted that after purchase, the product should be placed in the refrigerator as soon as possible, preferably in the coldest zone, and from an open package, cottage cheese should be transferred to a glass or ceramic container with a tight lid.
As the publication's interlocutor noted, in the summer, the shelf life of cottage cheese may be reduced, and if in a closed factory package it remains fresh for 3 to 4 days, then after opening - no more than 24 hours. The expert drew attention to the fact that homemade cottage cheese without preservatives is recommended to be consumed within 36 hours.
According to Volokitina, the same rules apply to other dairy products, namely sour cream, yoghurts, fermented baked milk, kefir and curdled milk. The specialist advised paying special attention to the integrity of the packaging, expiration dates and storage conditions in the store. The publication's interlocutor recommends consuming such products within 1-2 days after opening.
The expert warned that signs of a spoiled product may include an unpleasant sour or bitter smell, a change in consistency, the appearance of mold or unusual spots. A swollen package with a dairy product, in turn, also indicates a violation of storage conditions in the store, Volokitina added.
